What sort of fish should I catch with this pole? (Steelhead, Coho Salmon, Chinook Salmon, Sturgeon, Channel Catfish?)
and what size line should I use and how should I rig it up?
Dang – you’re wanting to go after some big fish, aren’t you? Your rod/reel there will do fine for anything up to about 8lbs – 10lbs. If you are targeting smaller salmon, it might do fine, but I wouldn’t trust it on even a 8lb – 10lb salmon. It will do fine for eater-sized Channel Cats up to about 12lbs or so. Unless you’re catching hatchling Sturgeon, then no, there’s no way it could handle them. You didn’t mention them, but your rod/reel will also do fine for Bass, Bluegill, & Crappie.
Spool your reel with 10lb Trilene XL monofilament.
Use a Carolina rig, with a 1/4oz egg sinker, a average-sized 2-way swivel, and a #4 Eagle Claw Baitholder hook.
Your rod/reel is just a little too light and of low-quality, especially for big hard-fighting Salmon, Steelhead, Sturgeon, and Catfish.
